Here’s another of my favorite healthy recipe. I’m a sweet tooth, and I’m always looking for healthy, no sugar added dessert recipes. One of my favorite is definitely this super quick cookie recipe. It’s vegan, easy to make, cheap and nutritious.

The walnuts are a great source of Omega 3, and the bananas provides potassium, vitamin B6, vitamin C and dietary fibers, and the oatmeal is a wonderful way to get your precious selenium, manganese, tryptophan, vitamin B1 and phosphorus.

It’s the potassium in the bananas that can help you lower your blood pressure. Some research suggest that including more bananas in your diet may help you drop your blood pressure.

Ingredients:

3 medium bananas
2 cups of old fashion oats (for chewier cookies, use quick cooking oats)
1 cup of dates, chopped
1/2 cup of chopped walnuts
1/2 cup of vegetable oil (I use light tasting olive oil)

Preheat the oven at 350°F. Mash the bananas in a large bowl. Add the oats, dates, oil and walnuts and let site for a few minutes. On an oiled baking sheet, drop some of the cookie batter using an oiled tablespoon. Shape the cookies into circles if you like. Cook 10 to 12 minutes, until the base of the cookies is golden brown.

Note: the cookies will get a bit crispier after cooling.
