Very Berry Raw Pie
This is my husband favorite dessert. The good thing is that not only it’s packed with antioxidants and Omega 3, it also take only a few minutes to make and require no baking, making it perfect for a sunny summer afternoon (or whenever you feel like it!)
The fact that it uses fresh, uncooked berries keeps all the nutrients. It best to make this pie when fresh berries are in season. If not, it can be a quite expensive recipe to make. But it taste so good it worth every penny!
For the crust:
1 cup of walnuts
1 1/2 cup of almonds
1 1/2 cup of dates
For the filling:
5 cups of fresh berries of your choice
3 tbsp of honey or agave nectar
1 1/2 tbsp of cornstarch
In a food processor, grind the walnuts, the almonds and the dates until the mixture turns into a coarse texture. When done, the “dough” should stick together when pressed between your fingers. Press evenly in a 9 inches pie pan.
Take 2 cups of the berries and mix it with the cornstarch and honey using a blender until smooth. Place the mixture in a small saucepan over medium heat until it thickens. In a bowl, mix the purée with the remaining berries and pour in the crust. Allow the pie to set in the refrigerator for about 1 hour.
To make this pie 100% raw, you can switch the honey for agave nectar, and use a bit of guar gum to thicken instead of thickening over the stove.
